Frequently Asked Questions

Biodynamic Winemaking Philosophy

  • Because living soils create living wines. Demeter is not a label for us, but a philosophy — a commitment to nature and authenticity.

  • Our Kune Kune pigs promote biodiversity and keep the soil alive. They are part of our closed Demeter biodynamic cycle of plant, animal, and human — essential to sustainable viticulture in South Tyrol.

  • Sustainability means continuity — ecological, social, and cultural. We think in generations, not years.

  • We plant vineyards at higher altitudes and work gently with nature. This helps us preserve freshness, balance, and origin in every vintage.

  • Because we work independently and cultivate all our grapes ourselves. These partnerships reflect our values of authenticity, transparency, and responsibility.

Family-Run Winery & Core Values

  • Our family lives and works among the vines. Every decision is made with respect for heritage and future generations

  • We preserve what has proven itself and renew what makes sense. Ancient knowledge and modern precision form a harmonious unity in our cellar.

  • Wine for us is craftsmanship, not industry. Every bottle carries the human touch.

  • Because we don’t contradict nature. Each vintage tells its own authentic story.

Vineyards, Terroir & Altitude in South Tyrol

  • Our vines grow between 250 and 1,050 meters (820–3,440 ft) above sea level — these elevations give our wines freshness, tension, and depth.

  • Our wines are a portrait of our homeland, carrying its light, soil, and landscape.

  • Our mountain spring water is pure and mineral-rich. It keeps us independent and in natural harmony.

  • It’s our Dolomite spring water, pure and vibrant — used throughout our estate.

Natural Winemaking Methods & Cellar Practices

  • Our wines ferment with the grape’s natural yeasts, expressing true character, depth, and terroir.

  • We intervene only when necessary. The wine develops naturally and autonomously — we simply guide and observe.

  • The wine matures on its own yeast, gaining structure, stability, and natural protection. This creates depth and fine texture.

  • Technology serves us — not the other way around. We use it to preserve nature’s integrity, not to replace it.

  • A cuvée is the artful blending of different grape varieties or vineyards. It arises from balance, not coincidence.

Unfiltered Wines, Sediment & Vegan Practices

  • We do not filter our wines during aging. Only before bottling we apply a light natural filter to remove particles and insects.

  • Because we remove nothing that belongs to the wine. Clarity comes through patience, not technology.

  • Sediment is a natural deposit of yeast and minerals. It shows that the wine remains authentic and alive.

  • Because we avoid animal products entirely. We use only bentonite clay, a natural mineral, for clarification if needed.

Sustainable Packaging, Corks & Materials

  • Less glass means less CO₂. Sustainability begins with small decisions.

  • DIAM is a natural, TCA-free cork, combining safety and classic elegance.

  • A blend of carnauba and beeswax, free from synthetic additives. It protects the wine and reflects our natural philosophy.

Wine Aging, Availability & Drinking Window

  • We bottle only when quality truly convinces us. In challenging years, we choose not to produce.

  • The drinking window is the period when a wine shows its perfect harmony. Our wines are elegant, long-lived, and evolving beautifully.

Wine Labels, Design & Accessibility

  • Because wine should be accessible to everyone. Braille stands for inclusion, awareness, and respect.

  • The BL monogram stands for Baron Longo. It has long adorned seals and embroideries — a symbol of heritage and identity.
