Winemaking process

Varieties:
Pinot Grigio is a traditional grape variety of the South Tyrolean Unterland.

Terroir:
The grapes come from a single vineyard at around 300 meters altitude with 45-year-old vines. They grow in a mild Mediterranean microclimate on limestone debris soils over porphyry bedrock, which contributes to the wine’s clarity and elegant structure.structure.

Vinification:
Fermentation takes place ¼ in large wooden casks and the remaining portion in stainless steel. The wine then matures on the full lees, undergoes malolactic fermentation and finishes with a short bottle aging.

The 20 hectares of the biodynamically cultivated vineyards of Baron Longo are located in South Tyrol’s south, around the picturesque Castelletto in Egna. The vineyards range from 220 metres a.s.l. up to Montagna, in the Trudner Horn Nature Park, where Chardonnay and Pinot Noir grapes thrive. The main varieties produced by the family winery are Chardonnay, Pinot Blanc and Cabernet. As a winemaker, Anton Baron Longo concentrates on wines that are distinguished by their elegance.
